New Mexico Chile Festival
So ... we really like the flavors of New Mexico, especially the wonderful chile peppers grown, harvested and processed there. They truly represent the flavors of the region in their different levels of heat and roasty goodness. You just have to see them roasting in a six-foot wire cage tumbler outside a home-cooking Mom & Pop restaurant to really get why they're they're so special.
To pay homage to this Chile Capital, we created a blend of Sandia chile pepper, New Mexico chile pepper, garlic, onion, smoked red Serrano chile pepper, Chimayo chile pepper, Mexican oregano, green Hatch chile pepper, Guajillo chile pepper, green Serrano chile, sweet smoked paprika, pink Himalayan salt, New Mexico Lumbre chile pepper, coriander, nutmeg and cumin.
